Nut-Mix Snack Packs

Sunday I put my new little scale to good use making Custom Nut-Mix snack packs:

First, I wanted to try out my coconut oil from my shopping spree for 10 of the 150 Healthiest Foods.

So, I used about 1/8 cup to prepare a custom nut-seed mix – the 1/8 of a cup was a little too much.

The Mix

1 -Tablespoon coconut oil (Costco)

1/2 Cup raw blanched almond slivers (Trader Joe’s)

1/2 Cup raw hulled sunflower seeds (Trader Joe’s)

1/2 Cup raw hulled pumpkin seeds (Trader Joe’s)

Melt coconut oil in a pan on medium heat.

Dump in the raw nuts and seeds.

Add a little salt to taste.

Stir until brown – this takes several minutes (pan photo is not brown yet):

Looks like this when brown:

Pat excess oil off if needed (if you use too much like me).

Measure in 1 oz increments and place in small plastic bags:

Adjust scale to account for the weight of the plastic bags:

When done, you have nice Nut-Mix Snack Packs -(Note: I made two batches before bagging):

Each 1 oz snack pack has 5.3g carbs, 7 g. protein; and 2 g fiber.
