Canadian Bacon and Veggie Breakfast Scramble

Here’s an easy meal for breakfast when you are not in the mood for eggs or the typical things.

Ingredients:

  • Onion
  • Orange Bell Pepper
  • Mushrooms
  • Canadian Bacon
  • Chipotle Pepper Flakes
  • German Mustard
  • Olive Oil

Cut up onions, orange bell pepper, mushrooms, Canadian Bacon and cook in 1 tbsp of olive oil. You can adjust the amounts of each to suit yourself. If you are sharing, add a lot because it’s really good!

Sprinkle with Chipotle Pepper Flakes.

When done, serve with small dallops of German Mustard on top.

This goes really good with a cole slaw. I used my favorite one from Alon’s which I am going to try to replicate soon.
