P’s Tuesday 2.18 and Wed. 2.19 Meals

 

Tuesday and Wednesday I had some very good meals:

TUESDAY:

Breakfast was turkey salad with celery and Miricle Whip:

Lunch was slow roasted pork with a little BBQ sauce and Frank’s Hot Sauce:

Snack later was 1 1/2 Oz Cashews:

Dinner was homemade chicken and kale soup made with chopped up chicken breast, shredded carrots, a bag of organic Kale from Trader Joe’s, Trader Joe’s Organic chicken broth, and cream:

I also made a couple of quiches – one was the traditional sausage quiche, and I experimented with one made of:

Arugula, spinach, mozzarella cheese, goat cheese and chopped kalamata olives.  It was outstanding!

WEDNESDAY:

Of course I had to have the great “Greek style” quiche for breakfast:

For an early evening snack, I have 1/2 slice of the sausage quiche.  I took them both to the office and our secretary LOVED the Greek-style quiche!!

Dinner was left over chicken and kale soup – but I forgot to take a picture.
